Grey (or white)-- and especially dapple grey-- is an incorrect colour for any young or newborn foal. Grey foals are born black (or any solid base coat colour)-- and coat colour begins to turn after the first foal coat is shed out (usually between 3 - 5 months). The Breyer alabaster Family Arabian Foal represents a foal at a very young age (around 3- 5 weeks). The link you provided in your description points to a much older foal whose first coat (probably chestnut) has already shed out, but yet has not turned completely white. Grey foals are born black (or any solid base coat colour)-- and coat colour begins to turn after the first foal coat is shed out (usually between 3 - 5 months). Grey is a colour that acts as a modifier over the base coat, gradually causing the hairs to grow lighter (greyer) over time, and is seen in mature adult horses or yearlings (not appropriate for newborn or very young foals!). Currently, MHOSS does not offer any classes for unrealistic colour or decorator-type models.
